There are two work arounds for this EPS issue in LabVIEW 2012.
The first is to open the EPS file in a text editor and replace each instance of polyLine32 with polyLine. That solution has been suggested earlier in this thread.
The second solution is to save the VI as a LabVIEW 2011 VI and re-open the VI in LV 2011. Then export the graph as an EPS. The EPS file should be viewable now.
