How do I plot the output of a sensor with respect to the output of a different sensor?

I don't understand,

Why do I need a bridge amplifier for my load cell?

Also,

Why do I need a distance sensor with an analog output?

Are you implying that that the clock needs to connect to two analog inputs?

So I now realize that I need a load cell bridge amplifier in order to boost the output voltage signals...I am still confused as to how to acheive my required SPS (around 350 at least). 

I have a load cell amplifier bridge but it only has the options of 10SPS or 80SPS. Does it have to be a "load cell" amplifier bridge that I end up buying?

I cant seem to find what I'm looking for:/
