I need help documenting this program (accelometer myrio). I know what it does, but dont quite understand the code (what each component is doing)

Did you write the code?  Do you understand the code?

Start by describing what the program is supposed to accomplish.  In broad strokes, describe how it works.  Where there are places where special processing is needed, describe what needs to be done, and how it was accomplished.

Once you've got a few pages written, give it to a colleague and see if they can understand how the code works.  Sometimes including diagrams help get your point across.
