Want to combine 2 bytes into one. Having a brain fart.

I think you want to AND your two bytes.

if numbers are aa & bb and you want number as 'aabb'.
Then multiply aa by 100 and add bb.
Hope this will help
number = aa * 100 + bb

Yep, you want the Join Numbers. It can be found in the Numeric->Data Manipulation palette. From 2 U8s, this will give you a U16.

All those posting join will not address the OP's question. In his VI he indicating he would have one byte which was 0x2F and another byte which was 0x02. He said his expected response was 0x22. Therefore he would need to AND the values, not join them.
