Using an USB-6009 and a dual-axis accelerometer(http://www.parallax.com/Portals/0/Downloads/docs/prod/sens/28017-Memsic2Axis-v2.0.pdf).
Is it possible to produce the frequency waveforms for both the X and Y axis on graphs using LABVIEW with the input DAQ assistant VI ? I've tried again and again but to no avail.

Your sensor have a 100Hz PWM output for each axis.
The USB6009 has no counter to measure pulsewidth.
You can try to capture both channels as fast as possible (200kSPS) and calculate the mean value over n periodes (n x 2000 samples for 100Hz, but is the output PWM really 100Hz??)
.... windowing helps.
This mean value calculation can be done also analog by a simple RC filter with a time constant ~ > 10Hz .
